  • 1 lb sausage (Italian, chorizo, or smoked)
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 2 cups carrots, sliced
  • 2 cups celery, chopped
  • 2 cups Yukon gold potatoes, cubed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. 1. Prepare your ingredients: dice the onions, mince the garlic, slice the carrots and celery, and cube the potatoes.
  2. 2. In a large pot over medium heat, cook the sausage until browned on all sides. Remove and set aside.
