Ingredients
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup diced Hatch green chilies (mild or hot)
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 8 flour tortillas (10-inch)
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- Cooking spray
- ½ cup sour cream (or Greek yogurt)
- 2 tbsp hot sauce (adjust to taste)
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper. Bake in a dish for 25-30 minutes until cooked through. Allow cooling before shredding.
- In a large bowl, mix shredded chicken, diced Hatch chilies, cheeses, cumin, paprika, and garlic powder until well combined.
- Lay tortillas flat and spoon filling onto each. Roll tightly from one end to the other, seam-side down on a parchment-lined baking sheet.
