  • 4 boneless, skinless chicken breasts
  • 1 lb gnocchi (fresh or frozen)
  • 1 cup freshly grated asiago cheese
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 3 tbsp unsalted butter
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat; cook chicken for 6-7 minutes per side until golden brown. Remove and let rest.
  2. In boiling salted water, cook gnocchi according to package instructions (about 2 minutes). Drain and set aside.
  3. In the same skillet, melt butter over medium heat. Add garlic; sauté for 1 minute. Stir in heavy cream and chicken broth, mixing well.
  4. Add asiago cheese to the sauce; stir until melted. Toss in spinach until wilted.
  5. Slice the rested chicken and return it to the skillet along with drained gnocchi. Toss everything gently to coat in the sauce.
