  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh cauliflower florets
  • 1 cup buffalo sauce (adjust to taste)
  • 8 oz cream cheese (full-fat)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. In a large pot, boil water or chicken broth. Add chicken breasts and cook until no longer pink, about 15-20 minutes. Shred the chicken with two forks.
  3. In another pot, boil salted water and cook cauliflower florets until tender but firm, about 5-7 minutes. Drain and set aside.
