- 4 cups fresh cauliflower florets
- 1 cup buffalo sauce (adjust to taste)
- 8 oz cream cheese (full-fat)
- 2 cups shredded cheddar cheese (divided)
- 1 cup panko breadcrumbs
Instructions
- Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
- In a large pot, boil water or chicken broth. Add chicken breasts and cook until no longer pink, about 15-20 minutes. Shred the chicken with two forks.
- In another pot, boil salted water and cook cauliflower florets until tender but firm, about 5-7 minutes. Drain and set aside.
