  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 4 cups fresh romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ½ cup freshly grated parmesan cheese
  • 4 large flour or whole wheat tortillas
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your grill or stovetop grill pan to medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until cooked through. Let rest before slicing.
  2. While the chicken rests, wash and chop romaine lettuce into bite-sized pieces.
  3. In a small bowl, mix Caesar dressing with lemon juice to taste.
  4. Lay out tortillas and layer with chopped romaine, sliced chicken, drizzle of dressing, and parmesan cheese.
  5. Fold in the sides of each tortilla and roll tightly to enclose the filling. Cut in half if desired.
