  • 1 lb boneless skinless chicken breasts
  • 4 flour tortillas (8-inch)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup bell peppers, sliced
  • ½ cup onion, chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat air fryer to 380°F (193°C). Season chicken with chili powder, cumin, salt, and pepper. Spray air fryer basket with cooking spray and cook chicken for 12-15 minutes until fully cooked. Let cool and shred.
  2. In a skillet over medium heat, sauté bell peppers and onions in a bit of oil until softened (about 5 minutes). Mix with shredded chicken.
  3. On one tortilla, layer chicken mixture and cheese; fold in half. Repeat for remaining tortillas.
  4. Lightly spray both sides of each quesadilla with cooking spray. Air fry at 380°F (193°C) for 6-8 minutes until golden brown.
