Ingredients
- 3 boneless, skinless chicken breasts (about 1 lb)
- 12 oz pre-cooked udon noodles
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 4 cloves fresh garlic (minced)
- 4 green onions (sliced)
- ¼ cup low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tsp honey
Instructions
- Prepare all ingredients by slicing chicken into thin strips, julienning bell peppers, and mincing garlic.
- In a large skillet over medium-high heat, add 1 tablespoon of oil. Once hot, stir-fry sliced chicken for about 5-7 minutes until golden brown. Remove from the pan.
- In the same skillet, add minced garlic and sauté for about 30 seconds. Add bell peppers and stir-fry for another 3-4 minutes until tender-crisp.
- Return chicken to the skillet along with udon noodles. Pour in soy sauce, sesame oil, and honey; toss to combine and heat through for another minute.
- Just before serving, add sliced green onions and toss gently.
