Ingredients
- 2 cups mixed mushrooms (cremini, shiitake, portobello), chopped
- 1 sheet frozen puff pastry (thawed)
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh thyme, chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup vegetable broth (low-sodium)
- 1/2 cup walnuts, chopped (toasted)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2. In a skillet over medium heat, add olive oil. Sauté onions and garlic until softened (3-4 minutes). Add mushrooms; cook until tender and moisture is released (5-7 minutes).
- 3. Stir in parsley, thyme, walnuts, salt, pepper, and vegetable broth. Cook until liquid evaporates (3-4 minutes); remove from heat.
- 4. Roll out puff pastry on a floured surface into a rectangle large enough to encase the filling completely.
- 5. Place mushroom mixture down the center of the pastry. Fold sides over like wrapping a gift and pinch seams together.
- 6. Place seam-side down on the baking sheet. Brush with egg wash or plant-based alternative.
- 7. Bake for 25-30 minutes or until golden brown. Serve warm with a side salad or roasted vegetables.
