  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • ¼ cup unsweetened cocoa powder
  • 1 cup fresh strawberries, pureed

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a greased springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla, then mix in eggs one at a time.
  3. Divide the mixture; add cocoa powder to one half for the chocolate layer.
  4. Puree fresh strawberries until smooth.
  5. Pour half of the plain cheesecake mixture into the crust. Spoon chocolate batter and strawberry puree on top; repeat layering. Swirl gently with a knife.
  6. Bake for 55-60 minutes until slightly jiggly in the center. Cool in the oven with the door ajar for an hour before refrigerating.
