  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 2 tsp instant coffee granules
  • 1 cup powdered sugar
  • 4 oz cream cheese (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a saucepan over low heat, melt together the butter and cocoa powder until smooth. Allow to cool slightly.
  3. In a bowl, whisk together granulated sugar and eggs until light and fluffy. Stir in vanilla extract.
  4. In another bowl, sift together flour, instant coffee granules, and a pinch of salt. Gradually fold into wet ingredients until just combined.
  5. Pour batter into prepared pan and bake for 25-30 minutes or until mostly clean when tested with a toothpick.
