  • 2 overripe bananas (about 1 cup mashed)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup dried unsweetened cranberries
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish or line with parchment paper.
  2. In a bowl, mash bananas until smooth. Stir in almond or peanut butter and honey/maple syrup until well combined.
  3. In another bowl, mix rolled oats, cranberries, cinnamon, and salt.
  4. Gradually add the dry mixture to the banana mixture and stir until just combined.
  5. Pour into the prepared dish, spreading evenly. Bake for 25-30 minutes until golden brown.
  6. Allow cooling completely before cutting into squares.
