  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium Yukon Gold potatoes, peeled and chopped
  • 3 large carrots, sliced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme or 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the ingredients by cutting the beef into cubes and chopping the vegetables.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides; remove and set aside.
  3. In the same pot, sauté onions and carrots for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Return the seared beef to the pot along with beef broth, thyme, and bay leaves. Bring to a boil then reduce heat to low.
  5. Add chopped potatoes, cover with a lid, and simmer for about 2 hours until the beef is tender.
  6. Remove bay leaves and serve hot with a sprinkle of fresh parsley if desired.
