Ingredients

Scale
  • 1 lb Italian sausage (or chicken/turkey sausage)
  • 1 cup long-grain rice
  • 1 medium onion (diced)
  • 1 cup bell peppers (mixed colors, diced)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 cup sharp cheddar cheese (shredded)

Instructions

  1. Prepare all ingredients: dice onion, bell peppers, mince garlic, and slice sausage.
  2. In a large skillet over medium heat, add a splash of olive oil. Once hot, add sausage and brown for about 5-7 minutes. Remove from skillet.
  3. In the same skillet, sauté diced onion and bell peppers for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Return cooked sausage to the skillet, add rice, and stir to coat with flavors for 1-2 minutes.
  5. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender.
  6. Remove from heat, stir in shredded cheese until melted. Serve warm.
