  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups fresh mixed greens (romaine and spinach)
  • 1 cup mandarin oranges (canned in juice or fresh)
  • 1/2 cup sliced almonds (toasted)
  • 3 green onions (chopped)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar (unseasoned)
  • 1 tbsp toasted sesame oil
  • 1 tsp sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Place chicken breasts on a parchment-lined baking sheet, season with salt and pepper, and bake for 25-30 minutes until cooked through. Let cool and slice into strips.
