  • 1 cup Arborio rice
  • 1 lb fresh asparagus, trimmed and cut into bite-sized pieces
  • 4 cups chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup freshly grated Parmesan cheese
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Heat the broth in a saucepan over low heat.
  2. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the chopped onion until translucent; add garlic and sauté for another minute.
  3. Stir in the Arborio rice and toast for about 2 minutes.
  4. Gradually add warm broth, one ladle at a time, stirring continuously until absorbed before adding more. Repeat for 18-20 minutes or until rice is creamy and al dente.
  5. Add chopped asparagus during the last five minutes of cooking to retain some crunch.
  6. Remove from heat, then stir in Parmesan cheese and remaining butter. Season with salt and pepper.
