  • 2 pounds Yukon Gold potatoes
  • 1 head of garlic
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream (or milk)

Instructions

  1. Peel and cut Yukon Gold potatoes into uniform chunks. Rinse under cold water and place in a large pot filled with salted water.
  2. Boil the potatoes over medium-high heat for 15-20 minutes until fork-tender. Drain well.
  3. Preheat oven to 375°F (190°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
