  • 8 oz (225g) pasta of your choice (penne or fusilli)
  • 1 block (8 oz) high-quality feta cheese
  • 2 cups ripe cherry tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 garlic cloves, whole
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In the prepared baking dish, combine cherry tomatoes, chickpeas, garlic cloves, oregano, olive oil, salt, and pepper. Toss until well coated.
  3. Place the block of feta cheese in the center and drizzle with additional olive oil.
  4. Bake for 25-30 minutes until the tomatoes burst and the feta turns golden brown.
  5. While baking, cook the pasta according to package instructions until al dente; drain.
  6. Once baked, mix everything in the dish together with the cooked pasta until evenly combined.
