  • 4 cups stale bread (mixed white and whole wheat)
  • 1 cup low-sodium chicken broth
  • 1 medium onion (finely chopped)
  • 2 stalks celery (chopped small)
  • 2 tbsp fresh sage (finely chopped) or 1 tbsp dried
  • 1 tsp fresh thyme or 1/3 tsp dried
  • 2 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin with nonstick spray.
  2. Cut stale bread into one-inch cubes and place in a mixing bowl.
  3. In a skillet, sauté the chopped onion and celery in olive oil over medium heat until soft (about 5 minutes).
  4. Add sautéed vegetables to the bread cubes, then mix in sage and thyme. Pour chicken broth over the mixture and stir until bread is moistened.
