- 2 tbsp vegetable oil
- 4 cups water or chicken broth
- 2 cups cooked short-grain rice
Instructions
- Prepare ingredients by washing and chopping all vegetables. Dice the onion and set aside.
- Heat vegetable oil in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).
- Add chicken thighs to the pot and brown on all sides (approximately 5-7 minutes).
- Stir in carrots and potatoes; cook for another 3-4 minutes to combine flavors.
- Pour in water or broth until ingredients are covered. Bring to a boil, then reduce heat to low.
- Add the curry roux and stir until dissolved. Cover and simmer for 20-30 minutes until chicken is tender and sauce thickens.
