  • 2 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, cubed
  • 3.5 oz Japanese curry roux (mild or spicy)
  • 2 tbsp vegetable oil
  • 4 cups water or chicken broth
  • 2 cups cooked short-grain rice

Instructions

  1. Prepare ingredients by washing and chopping all vegetables. Dice the onion and set aside.
  2. Heat vegetable oil in a large pot over medium heat. Add onions and sauté until translucent (about 5 minutes).
  3. Add chicken thighs to the pot and brown on all sides (approximately 5-7 minutes).
  4. Stir in carrots and potatoes; cook for another 3-4 minutes to combine flavors.
  5. Pour in water or broth until ingredients are covered. Bring to a boil, then reduce heat to low.
