  • 8 oz ribeye or sirloin steak
  • 1 tbsp olive oil (for potatoes)

  • ½ cup shredded sharp cheddar cheese
  • ¼ cup sour cream
  • 2 tbsp chopped chives or green onions

Instructions

  1. 1. Preheat your oven to 425°F (220°C). Scrub the russet potatoes under cold water and dry them thoroughly.
  2. 2. Prick each potato several times with a fork, rub them with olive oil, and season generously with salt. Place directly on the oven rack.

  4. 4. While potatoes bake, season the steak with salt and pepper. In a hot skillet, sear the steak for 4-5 minutes per side for medium-rare; adjust time for desired doneness.
