Ingredients
- 2 ripe heirloom tomatoes, sliced
- 4 tbsp olive oil (divided)
- 1 bulb garlic
- 4 slices sourdough bread
- 1 cup fresh mozzarella cheese, sliced
- 4 tbsp basil pesto
- Salt and pepper to taste
- Butter for grilling
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange tomato slices on the baking sheet, drizzle with 2 tbsp olive oil, season with salt and pepper, and roast for 20 minutes until tender.
- Wrap the whole garlic bulb in aluminum foil and bake alongside the tomatoes for 30-35 minutes until soft.
- Spread basil pesto on one side of each slice of sourdough. Layer mozzarella on one slice, add roasted tomatoes and squeezed roasted garlic, then top with another slice, spread side down.
