  • 1 lb boneless, skinless chicken breasts, cubed
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, heat olive oil and cook cubed chicken seasoned with salt and pepper until browned (5-7 minutes). Remove from skillet.
  3. Sauté onions and mushrooms in the same skillet until softened (4-5 minutes), adding garlic towards the end.
  4. Return chicken to the skillet; stir in heavy cream, thyme, salt, and pepper until heated through.
  5. Roll out puff pastry on a floured surface; cut squares to fit the filling. Place filling in the center of each square, fold over diagonally, and seal edges.
  6. Bake on the prepared sheet for 20-25 minutes until golden brown.
