  • 3 ripe Bosc or Anjou pears, peeled and sliced
  • 1 cup brown sugar, divided
  • 6 tbsp unsalted butter, divided
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a round cake pan.
  2. In a saucepan over medium heat, melt 2 tbsp butter with ½ cup brown sugar until bubbly. Remove from heat.
  3. Arrange pear slices in the pan and pour the butter-sugar mixture over them.
  4. In a mixing bowl, cream together remaining butter and sugar until fluffy. Beat in eggs one at a time, then stir in vanilla.
  5. In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt. Gradually add to wet ingredients until just combined.
  6. Pour batter over pears and bake for 35-40 minutes or until a toothpick inserted comes out clean. Allow to cool slightly before flipping onto a serving plate.
