  • 10 ounces fresh spinach
  • 15 ounces whole milk ricotta cheese
  • 1 cup freshly grated Parmesan cheese (divided)
  • 2 cups marinara sauce
  • 1 large egg
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C). Boil salted water in a large pot for the pasta shells.
  2. Cook the pasta shells according to package instructions until al dente, then drain and set aside.
  3. In a skillet over medium heat, sauté the spinach until wilted (about 3-4 minutes). Let it cool slightly before mixing with ricotta, half of the Parmesan cheese, egg, and Italian seasoning.
  4. Fill each shell with about one tablespoon of the spinach-ricotta mixture and place them in a greased baking dish.
  5. Pour marinara sauce evenly over the stuffed shells and sprinkle with remaining Parmesan cheese.
  6. Cover with foil and bake for 25 minutes; remove foil during the last 10 minutes to brown the top.
