  • 4 boneless, skinless chicken breasts (about 1 ½ lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup bell peppers (mixed red and green), sliced
  • 4 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • ½ cup sweet chili sauce
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp sesame oil
  • Cooked rice or quinoa for serving

Instructions

  1. Cut chicken into bite-sized pieces. Heat a large skillet over medium-high heat with a splash of cooking oil. Add chicken; season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes.
  2. Stir in minced garlic and sauté for about one minute until fragrant.
  3. In a separate bowl, whisk together soy sauce, sweet chili sauce, lime juice, and sesame oil.
  4. Pour the sauce over the cooked chicken. Stir well to coat evenly and simmer for another few minutes.
  5. Add sliced bell peppers and chopped green onions to the skillet. Sauté briefly for about two minutes until slightly tender.
