  • 4 boneless, skinless chicken breasts
  • 2 ripe mangoes, diced (about 2 cups)
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced

  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  3. Remove chicken from skillet; in the same skillet, sauté garlic for 30 seconds.
  4. Add diced mangoes, soy sauce, honey, and lime juice; simmer for 3-4 minutes until slightly thickened.
  5. Return chicken to skillet, spoon sauce over it, and cook for an additional minute.
