- 4 large russet potatoes
- 4 tbsp unsalted butter
- 1 cup full-fat sour cream
- 1 ½ cups grated sharp cheddar cheese
- 2 green onions, chopped
- ½ cup cooked bacon bits (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place the russet potatoes on it. Prick each potato several times with a fork.
- Bake in the preheated oven for 45-60 minutes until tender. Let cool slightly before handling.
- Cut each potato in half lengthwise and scoop out most of the flesh into a mixing bowl, leaving about ¼ inch inside the skins.
- Mash the scooped-out potato with butter, sour cream, half of the cheddar cheese, and green onions until smooth.
- Spoon the mixture back into the potato skins, top with remaining cheese and bacon bits if using.
- Return to the oven for another 15-20 minutes until heated through and golden on top.
