  • 4 large russet potatoes
  • 4 tbsp unsalted butter
  • 1 cup full-fat sour cream
  • 1 ½ cups grated sharp cheddar cheese
  • 2 green onions, chopped
  • ½ cup cooked bacon bits (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place the russet potatoes on it. Prick each potato several times with a fork.
  2. Bake in the preheated oven for 45-60 minutes until tender. Let cool slightly before handling.
  3. Cut each potato in half lengthwise and scoop out most of the flesh into a mixing bowl, leaving about ¼ inch inside the skins.
  4. Mash the scooped-out potato with butter, sour cream, half of the cheddar cheese, and green onions until smooth.
  5. Spoon the mixture back into the potato skins, top with remaining cheese and bacon bits if using.
  6. Return to the oven for another 15-20 minutes until heated through and golden on top.
