  • 4 medium russet potatoes (about 2 lbs)
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup shredded sharp cheddar cheese
  • 1 cup fresh salsa
  • ½ cup sour cream
  • ½ cup sliced jalapeños
  • ¼ cup chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C). Wash and prick the russet potatoes with a fork. Bake directly on the oven rack for 45-60 minutes until tender.
  2. While the potatoes bake, heat a skillet over medium-high heat. Add ground beef and cook until browned (5-7 minutes). Drain excess fat.
  3. Sprinkle taco seasoning over cooked beef and mix well. Add a splash of water if needed; simmer for a couple of minutes until thickened.
