  • 1 medium English cucumber, thinly sliced
  • 1 cup fresh blueberries
  • 1 ripe avocado, diced
  • 2 tbsp freshly squeezed lime juice
  • ¼ cup fresh mint leaves, chopped

Instructions

  1. Wash all produce thoroughly. Peel the mango and cut it into cubes. Thinly slice the cucumber. Rinse the blueberries and pat dry. Halve the avocado, remove the pit, scoop out the flesh, and dice it.
  2. In a large bowl, combine mango, cucumber, blueberries, and avocado. Gently toss to mix.
  3. Drizzle lime juice over the salad. Add mint leaves along with salt and pepper. Toss gently to combine.
  4. Refrigerate for 15-20 minutes for enhanced flavors.
