  • 4 chicken thighs (bone-in, skin-on)
  • 1/2 cup Piri Piri sauce
  • 1 cup long-grain rice
  • 2 cups water
  • 1 red bell pepper (diced)
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lemon (freshly squeezed)
  • Salt to taste

Instructions

  1. Marinate the chicken: In a bowl, coat chicken thighs with Piri Piri sauce and refrigerate for at least 1 hour or overnight.
  2. Prepare the rice: Rinse rice under cold water until clear. Boil water in a pot, add salt and rinsed rice, then cook according to package instructions until tender.
  3. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add diced red bell pepper and sauté for about five minutes. Stir in chopped herbs.
  4. Cook the chicken: Add marinated chicken to the skillet and cook over medium-high heat for about six minutes on each side until golden brown and cooked through.
  5. Combine: Add cooked rice to the skillet and gently mix everything together before serving hot with lemon juice drizzled on top.
