  • 4 large flour tortillas
  • 1 cup bell peppers, chopped (red or yellow)
  • 1 medium onion, chopped
  • 2 tsp olive oil
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • Sour cream and fresh cilantro for topping

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
  2. Stir in black beans, cumin, chili powder, and garlic powder; cook until heated through.
  3. Lay a tortilla flat and spoon the bean mixture into the center. Top with shredded cheese.
  4. Fold sides in and roll tightly from the bottom up. Secure with toothpicks if needed.
  5. Grill burritos seam-side down on medium heat for about 3 minutes per side until golden brown.
