  • 1 cup fresh cranberries (or frozen)
  • 1 cup balsamic vinegar
  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 2 tbsp fresh rosemary (chopped)
  • 2 cups low-sodium beef broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C). Prepare a roasting pan with nonstick spray or foil.
  2. In a bowl, mix cranberries, balsamic vinegar, honey, minced garlic, and chopped rosemary; set aside half for sauce later.
  3. Season the beef roast generously with salt and pepper. Sear the roast in a skillet over medium-high heat for 3-4 minutes on each side until browned.
  4. Place the seared roast in the roasting pan. Pour the cranberry mixture over it and add beef broth around it.
  5. Cover tightly with foil and roast for 2-2.5 hours or until the internal temperature reaches 135°F (57°C) for medium-rare.
