Ingredients

Scale
  • 4 thick bone-in pork chops (about 1-inch thick)
  • 2 large yellow onions, sliced
  • 1 cup low-sodium beef broth
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • Salt and pepper, to taste
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)

Instructions

  1. Preheat oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat.
  2. Season pork chops with salt and pepper. Sear each chop for 4-5 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, add sliced onions; cook over medium-low heat for about 15 minutes until caramelized. Add minced garlic during the last minute.
  4. Deglaze the skillet with beef broth, scraping up browned bits; let simmer for 3 minutes. Stir in heavy cream and thyme.
  5. Return pork chops to the skillet, spooning onion mixture over them. Cover and bake for 20-25 minutes or until cooked through.
