- 3 cups cooked jasmine rice (preferably day-old)

- 4 green onions, chopped
- 4 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp mirin
- 1 tsp sesame oil
- 2 tbsp vegetable oil (for cooking)
Instructions
- Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add diced chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add another tablespoon of oil if needed. Sauté minced garlic for about 1 minute until fragrant. Add mixed vegetables and cook for an additional 3-4 minutes.
- Stir in the cooked jasmine rice and return the chicken to the skillet. Mix well to combine.
- In a small bowl, whisk together soy sauce, mirin, and sesame oil. Pour over the rice mixture and stir until evenly coated.
- Cook everything on medium heat for another 3-5 minutes until heated through. Garnish with chopped green onions before serving.
