  • 1 cup sushi rice
  • 1 ¼ cups water
  • 1 lb large shrimp (deveined)
  • ½ ripe avocado (sliced)
  • ½ English cucumber (sliced)
  • 2 tbsp Sriracha sauce
  • 2 tbsp seasoned rice vinegar
  • 3 tbsp mayonnaise
  • 1 tbsp lime juice
  • Fresh cilantro (to taste)

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a pot, bring to boil, reduce heat, cover, and simmer for 18-20 minutes. Cool slightly and mix in seasoned rice vinegar.
  2. In a skillet, heat oil over medium heat. Cook shrimp seasoned with salt and pepper for about 3 minutes until pink. Toss with Sriracha sauce.
  3. Slice avocado and cucumber thinly.
  4. Layer sushi rice in a mold, followed by shrimp, avocado, and cucumber slices. Repeat layers to desired height.
  5. Mix mayonnaise with Sriracha and lime juice; drizzle over stacks before serving.
