  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced (pitted)
  • 8 oz mini mozzarella balls
  • 1/4 cup Italian dressing

Instructions

  1. Cook the rotini pasta according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cools, chop cherry tomatoes and cucumber into bite-sized pieces and place in a large mixing bowl.
  3. Once cool, add the pasta to the bowl with the vegetables and toss gently.
  4. Create 'eyeballs' by placing a slice of black olive on each mozzarella ball, then arrange them on top of the salad.
  5. Drizzle Italian dressing over the salad and toss gently until everything is coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.
