  • 3 lbs chuck roast
  • 2 bay leaves
  • 4 dried guajillo chiles
  • 1 (14 oz) can diced tomatoes
  • 1 large onion, chopped
  • 4 cups low-sodium beef broth
  • ½ cup chopped cilantro

Instructions

  1. Trim excess fat from the chuck roast and cut it into large chunks. Season with salt and pepper.
  2. Boil water and soak guajillo chiles for about 15 minutes until softened; then drain.
  3. Blend soaked chiles, diced tomatoes, onion, garlic cloves, bay leaves, cumin powder, and beef broth until smooth to create the sauce.
  4. In the slow cooker, place the seasoned meat chunks and pour the blended sauce over them. Cook on low for 8 hours until fork-tender.
  5. Shred the meat with two forks and mix it back into the cooking liquid.
  6. Warm corn tortillas in a skillet or microwave, fill with shredded meat, top with onions and cilantro, and serve with broth on the side.
