  • 5 medium ripe tangerines (about 1 pound), peeled and sliced
  • 1 ½ cups granulated sugar
  • ¼ cup freshly squeezed lemon juice
  • 1 cup water

Instructions

  1. Wash the tangerines thoroughly and peel them, removing as much white pith as possible. Slice into thin rounds or small pieces.
  2. In a large pot, combine the tangerines with sugar and lemon juice. Add enough water to cover the fruit mixture slightly.
  3. Over medium heat, stir until the mixture dissolves and begins to simmer.
  4. Reduce heat to low and let it simmer for 45 minutes to an hour, stirring frequently until it thickens and coats the back of a spoon.
  5. Remove from heat, allow to cool slightly, then pour into sterilized jars leaving some headspace at the top.
  6. Seal tightly while warm and let cool completely before storing in the refrigerator or pantry.
