- 1 lb ground beef (80% lean)
- 1 cup plain breadcrumbs
- 1 large egg
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 tbsp soy sauce
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 tbsp unsalted butter
- ¼ cup fresh parsley or chives, chopped
Instructions
- In a bowl, combine ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix gently and form into 1-inch meatballs.
- Heat olive oil in a skillet over medium-high heat; sear meatballs for 3-4 minutes per side until browned. Remove from skillet.
- In the same skillet, sauté additional onions if desired; stir in flour to create a roux. Gradually whisk in beef broth and soy sauce; simmer until thickened.
- Return meatballs to skillet; cover and simmer on low for 10-15 minutes until cooked through.
- Boil potatoes in salted water until fork-tender (about 15-20 minutes). Drain and return to pot.
- Add butter, minced garlic, herbs, salt, and pepper to drained potatoes; mash until smooth.
- Serve meatballs with gravy over mashed potatoes.
