  • 4 boneless, skinless chicken breasts
  • 8 oz fresh mushrooms (cremini or shiitake), sliced
  • 1 cup grated Asiago cheese
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Sear for 5-7 minutes on each side until golden brown; remove and set aside.
  2. In the same skillet, add mushrooms and garlic. Sauté for about 5 minutes until tender.
  3. Pour in chicken broth; bring to a simmer. Stir in heavy cream and let reduce for 3-4 minutes. Gradually add Asiago cheese until melted.
  4. Return chicken to skillet, spoon sauce over it, and simmer for another 5-10 minutes.
  5. Transfer to an oven-safe dish if desired; bake uncovered for an additional 15 minutes until bubbly.
