- 2 tbsp Dijon mustard

- 1 tbsp olive oil
- Salt and pepper to taste
- 1 cup red wine
- 1 cup low-sodium beef stock
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, add olive oil. Sauté mushrooms until moisture evaporates; season with salt and pepper. Let cool.
- Season beef with salt and pepper. Sear all sides in a hot pan for about 2-3 minutes per side. Brush with Dijon mustard once cooled.
