  • 2 medium flour tortillas
  • 1 cup fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 medium red onion, thinly sliced
  • 2 tsp olive oil

Instructions

  1. Prepare your ingredients by rinsing the spinach and slicing the red onion.
  2. Preheat a large skillet over medium heat and add olive oil.
  3. Place one tortilla in the skillet, and layer half the mozzarella, spinach, feta, and sliced onion on top. Cover with another tortilla.
  4. Cook for 3-4 minutes until golden brown, then flip carefully and cook the other side for another 3-4 minutes until crispy.
  5. Remove from heat, cool slightly, slice into wedges, and serve warm.
