- 3 lb chuck roast
- 1 cup low-sodium soy sauce
- 2 tbsp fresh ginger, grated
- 4 cloves garlic, minced
- 2 tbsp brown sugar
- 2 tsp sesame oil
- 4 large carrots, cut into chunks
- 1 large onion, quartered
Instructions
- Preheat your Traeger grill to 225°F (107°C).
- In a bowl, combine soy sauce, garlic, ginger, brown sugar, and sesame oil to create the marinade.
- Season the chuck roast with salt and pepper; place it in a resealable bag and pour half the marinade over it. Seal and marinate in the refrigerator for at least two hours or overnight.
- After marinating, place the roast in a cast iron skillet with carrots and onion. Drizzle remaining marinade over the top.
- Smoke on the preheated grill for 3–4 hours until internal temperature reaches 190°F (88°C).
- Let rest for 15 minutes before slicing and serve with roasted vegetables.
