  • 3 lb chuck roast
  • 1 cup low-sodium soy sauce
  • 2 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 2 tbsp brown sugar
  • 2 tsp sesame oil
  • 4 large carrots, cut into chunks
  • 1 large onion, quartered

Instructions

  1. Preheat your Traeger grill to 225°F (107°C).
  2. In a bowl, combine soy sauce, garlic, ginger, brown sugar, and sesame oil to create the marinade.
  3. Season the chuck roast with salt and pepper; place it in a resealable bag and pour half the marinade over it. Seal and marinate in the refrigerator for at least two hours or overnight.
  4. After marinating, place the roast in a cast iron skillet with carrots and onion. Drizzle remaining marinade over the top.
  5. Smoke on the preheated grill for 3–4 hours until internal temperature reaches 190°F (88°C).
  6. Let rest for 15 minutes before slicing and serve with roasted vegetables.
